Flaxseed - My Little Secret in Desserts You Don’t Have to Hide
How one humble seed became essential in my plant-based kitchen.
If we were sitting together in my kitchen right now, with a cup of tea and a plate of cookies between us, I’d probably smile and say:
“You know, there are no eggs or sugar in these.
They’re holding together thanks to… flaxseed.”
Small, unassuming, kind of grayish.
But in my plant-based baking - absolutely essential.
Why I love it so much
First - it’s simple.
Second - it works.
And third - it makes desserts not only tasty, but also more thoughtful.
Good for the body and for your energy.
Flaxseed is rich in fiber, healthy fats, and plant-based omega-3s.
It supports digestion, helps you feel full longer, and - here’s my favorite part - it slows down how sugar is absorbed into the bloodstream.
So even when you’re using healthier sweeteners like dates, bananas, or coconut sugar, flax helps create a gentler blood sugar response.
That means fewer spikes, crashes, and cravings - and more calm, steady energy.
That’s a big win, especially for kids. And honestly? For us, too.
My favorite way to use it — the flax egg.
After lots of experimenting, I finally found the version that works every time - and I’m happy to share it with you.
The Best Vegan Flax Egg Recipe!
How to make a vegan flax egg:
Grind 20 g of flaxseeds in a coffee grinder.
Add 50 g of warm water and mix well.
Let sit for 10 minutes until it thickens into the perfect egg substitute.
Where I use it the most
In carrot muffins
In cookies I want to feel good about giving my kids
In sugar-free pancakes
In fudgy vegan brownies
In raw treats that need structure but not stiffness
Sometimes I even mix flax and chia for a different texture or flavor.
Plant-based baking teaches you to play, not obey.
